Some of the photos are from the official plane spotting facility mentioned on the Hong Kong International Airport's website. It is located in Terminal 2 and is accessed via the Aviation Discovery Centre on level 6 (which also includes a 4D cinema and various displays about aviation). You need to buy an entry ticket from the cinema counter and then take the lift up to the roof. Strictly speaking, no food and drink is allowed, so don’t enter with bags of food visible! There are no toilet facilities on the viewing deck but you can go out for a short while and re-enter without having to pay again. The deck is open from about 10:30am to 10pm. BTW, the Airport Regal Hotel is a fantastic place to stay and spot from, sample video shot from one of the rooms:

Thanks Fabien! Petera380 has hit the nail on the head in terms of the spotting location. That location is best for when aircraft are landing from the east (25R) as that's when aircraft are at its closest to the location and the lighting is semi decent for most of the day. There's another spot I sometimes go to when I'm in HKG on the other side of the airport although I don't prefer it that much. I'll post pics from there in some other threads a bit later on so when that happens, let me know if you want some details about that location.
The view from the Regal Hotel looks nice! It's just a shame that it's not economically viable for me when I visit HKG.
