There is some structural difference between the A330-200 and A340-200 wings regarding the attach points for the outer engines, which I think would be difficult to remove/adjust. Just for the joke of it, being that similar, why has nobody converted a A340-200 to A330-200? This is an excellent question. I had never thought about it, but I suppose that part of the answer is the cost of a change of engine + engine-to-airframe interface. These costs are the reason why lessors would like to have a common interface between the different engines that can be fitted on a given airframe : it would fluidify the used frames market.

I was just reading on A.net the idea that the MSN925 would not have the A340 wings like the other 330 MRTTs, because she was only build for boom refuelling and would not need the outer engine hard points.
It would also be a reason that Airbus would not be able to sell it as an normal A330 MRTT because of the missing hard points.
