More and more A321neo should have an ACF fuselage. I don't think we can rule out the possibility that ACF fuselage production is still holding A321neo deliveries. There are also non AFC A321neos delayed and there are news about A321neo LR being delayed because of engine trouble.

There are no more A321 delayed than A320. There are only XFW frames delayed even CEOs. So I am little bit lost to understand why this should be an engine issue. Engine issue would mean gliders. I have not seen any stored glider in last months. Just wanted to point out that the article is 6 months old. A lot of changes might have happened since then so it may or may not be relevant today. It might be an old article, but the Air Transat A321LRs are now delayed by even more than that article suggested ? I think so far only almost 2 weeks. It’s still delayed either way obviously. That link has recently been spreading around airliners.net and that’s why I pointed out.

Air Tansat MSN 8755 is a perfect example, stored with engines since at least end of February, waiting for engines? Why were frames send to DRS?

It's increasingly evident this is an ongoing XFW issue rather than neo engine issues. MSN 8822 A321ceo for Delta has been stored with engines which we don't normally see. Another picture posted by addasih in the CEO thread shows MSN 8786 A320ceo for Viva Columbia just get towed out ready for flight tests. At the same time, TLS are already working on/ flight testing MSN 8860-8900 range. While XFW has been lagging and only mainly are at mid 8700-8800 range (barring some exceptions), both for ceo and neos. Normally from the past few years, XFW is usually ahead of TLS and others like TSN and BFM, making this year's XFW lagging increasingly evident.

Let's compare CEO progress between XFW and TLS. MSNs not yet flown from XFW: MSN 8748 Batik, MSN 8786 Viva Columbia, MSN 8822, 8854 Delta, MSN 8853 Lufthansa MSNs not yet flown from TLS: None. All CEOs under MSN 8900 have flown or delivered already. It's hardly believable that engines shortage could result in CEO delays in XFW. As for NEOs, it's possible that like you said, a shortage/problem of high thrust engines would result in some NEO delays. But putting all the delays blame on the engines problem is inconclusive.

So get concrete, what would be a reasonable explanation for delays? The only news where it was declared, why the A321LR was delayed, did say engines.
