I'd say it would have been more logical to go to China indeed instead of Vietnam, if in search of new customers (I'd assume there are more airlines likely to buy it in China than in Vietnam).
Though, most likely it's going to Vietnam for presentation to Vietnam Airlines and perhaps some gate tests?...

Like you said "Air China has ordered 10 A350-900s".... No need to sell them there, they are looking for NEW customers True but they are already sold to VN and it still goes to HAN ? The other places are a different story. Let's hope it will bring some results. Considering that VN will be the second A350 customer, the visit to HAN would be for familiarisation. They've already visited other early A350 recipients during Route Proving.

We know it happens but pictures are pretty rare - an Airbus pilot with a meal on his tray table. Does anyone have any idea how Boeing pilots have their meals? It's got to be quite a balancing act, no?

It is peculiar path - logical would be to go north over Germany, Poland, Rusia and ....
Similar to KAL902 or BAW25 on the picture.
Is it known why ?

The route taken (approximately via KVD) from TLS to GMP is 6456 miles based on Great Circle Mapper data ( www.gcmap.com/mapui?P=TLS-KVD-GMP) which is longer than the 5883 miles through the northern route ( www.gcmap.com/mapui?P=TLS-GMP) you mentioned which mean longer time in the air. Someone mentioned about doing more ETOPS tests. May be this route allowed for some tests to be done, but these are pure speculations from my end as I do not have any intel that Airbus did conduct such tests during this flight
