... Will this cause a gap in the 737NG production of 61 aircraft, or can Boeing somehow fill this by either overbookings or increased MAX ramp-up? I think Boeing has a buffer of 738 orders that is enough to make up for a few customers' changed orders.

No 61 is not 'a few'. And it's not the first conversion, Boeing lately converted more NG orders into MAX.

The likes of Ryan Air and Jet2 could easily step in to pick some bargains, buy one half price get one free
