This is the last A330 freighter identified in the firing orders, and while there are some existing orders out there I wonder when the next A330F will be built

The first Royal Jordanian A332F has been delivered (ex MH bird) although I can't find a pic of it yet.
Also the following headline seems to suggest EK Skycargo may be acquiring or leasing some A332fs

Could Airbus build Freighters as MRTT versions as well? Or even convert a freighter like this to tanker afterwards?

If I remember correctly, when the A330MRTT was being pitched to the USAF it had a cargo door on the main deck and such design can be seen in the following video. In that video though, it looks as if they've added a cargo door to a passenger based A330MRTT rather than basing that version of the MRTT off the A330-200F.

A real freighter with a cargo floor is heavier than a pax version with just a big cargo door and light weight floor. So you lose sort of payload and add operating costs if you add structural weight. However it might be a winning combination for military applications. When you move fighters there is all sort of heavy stuff that must be moved along. Just and idea.
