A real freighter with a cargo floor is heavier than a pax version with just a big cargo door and light weight floor. So you lose sort of payload and add operating costs if you add structural weight. However it might be a winning combination for military applications. When you move fighters there is all sort of heavy stuff that must be moved along. Just and idea. I'm sure if an air force wanted a MRTT based off a freighter and was willing to pay enough Airbus would probably be able to accommodate it. I guess for most air forces, the role of strategic airlifters such as the C-17 and the underbelly space of the A330MRTT would lessen the requirements for cargo carrying capabilities on the main deck of the A330MRTT.

There was a time when the US Air Force was compensating some airlines that committed to operate aircraft with reinforced floors, in case the service would need occasional extra lift.

One reason we see such pressure on A330F is that Boeing has unfilled 777 slots, hopes to sell freighters, and offers them at firesale price. This situation should be temporary as 779 production has started.

Edit: But no activity visible (flightradar24) for the last days
