I was wondering why could it take so long, would in fact require so much change and lots of hours of test-flying perhaps, and then I found this in the article but still I struggle to find where those 5 years will go!

I think 5 years is for rather more changes than talked about. Perhaps their is a new wing in the package.

Also do not forget the completely sold out and planned A32x line - so there simply might not be a space for a new order before that date... ? But who knows - frankly the more refining they do make, the better plane on the end will come out

AirAsia in talk for XLR order Air Asia has been trying for a while to convert part of its A339 order to A321neo. Airbus has disagreed so far, would a launch order for the -XLR mollify them ?

Several reasons may concur to explain Airbus' timeline. - As pointed out by Mjoelnir, some tweaking of the MLG and/or wing may be included, allowing the MTOW and range increase. I don't think however it can be more than tweaking, since a new wing would come with increased fuel volume - a different feature from what we have been told about the -XLR. - I think Airbus wants to make sure that this programme brings additional sales, not only conversions. I could see, for instance, conversions being tied to an order top-up. As this requires delivery slots, the -XLR schedule might be aligned with an A320 family production ramp-up.
