I assume that that is the Airbus electric plane in the air. At least it is the right type, Avro RJ100, with an Airbus flight number. fr24.com/AIB146/228e8e2e

They are not electric yet, right? So do they test the classic airplane before they go into modifying? Possibly engine out scenarios?

The airplane has been purchased by Airbus last November and modifications have already begun in the UK in the Spring. May just not be that visible at the moment like the graphic on the Airbus website is showing. I also don't think it will be fully electric, just part of it for testing for now.

Only one engine was replaced with the electrics. It is how the tests will be run. It is the in flight test for the drive components. Look at it like testing a new engine on a flying test bed. There is no need to test an Avro RJ100 before the change.

They may also be running a series of tests to obtain base line fuel burn info before swapping out one Jet for an electric one ?
Edit - We could do with some of the Toulouse spotters taking some photos so we can see if any external Mods have been done yet !

The livery seems to indicate engine number three is set to be exchanged for some eletric fan. So this would be the one to zoom in if possible please.
